The restaurant sets the challenge and the rules: a set amount of food inside a time limit, or a run of hotter and hotter sauces where you are out the moment you reach for the water. Usually one or two take it on, very often the stag, while the rest of the group eats a normal meal and watches.
Some challenges come with a reward for finishing, such as the meal on the house or a photograph on the wall. Ask what the rules are, what you get if you win, and whether it needs booking ahead, because some kitchens only run it at quieter times.
Tell the restaurant about any allergies before anyone starts. The hot ones are properly hot, so nobody should be pushed into it.
